8 oz elbow macaroni

2 cups cooked chicken, shredded (preferably rotisserie)

1/2 cup buffalo sauce (adjust based on spice preference)

4 tbsp unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

3 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1/4 cup crumbled blue cheese (optional for topping)

2 green onions, sliced (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Add the flour, whisking constantly until a smooth paste forms (about 1 minute). Gradually whisk in the milk, ensuring there are no lumps. Cook for about 5-7 minutes until the sauce thickens.

      Add Cheese: Reduce the heat to low and add 2 cups of sharp cheddar and all of the mozzarella cheese to the sauce. Stir until melted and creamy. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.

        Combine Chicken and Sauce: Stir in the shredded chicken and buffalo sauce until everything is well coated. If the mixture is too thick, you can add a little more milk until you reach your desired consistency.

          Mix in the Pasta: Gently fold in the cooked elbow macaroni until fully combined with the cheese and chicken mixture.

            Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Transfer the mac and cheese to a greased 9x13-inch baking dish. Sprinkle the remaining cup of sharp cheddar and blue cheese on top.

              Bake: Place in the oven and bake for about 20-25 minutes until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
