Butternut Squash & Black Bean Enchilada Skillet

1 medium butternut squash, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 small onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

2 cups enchilada sauce (store-bought or homemade)

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or Oaxaca recommended)

Fresh cilantro for garnish

Sliced avocado or guacamole for serving (optional)

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened. Then, add the minced garlic and sauté for an additional 1 minute until fragrant.

    Cook the Butternut Squash: Add the diced butternut squash to the skillet. Sprinkle with cumin, chili powder, smoked paprika, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally, until the squash is tender.

      Add Black Beans and Corn: Stir in the black beans and corn kernels, mixing until combined. Cook for another 2-3 minutes to heat everything through.

        Add the Enchilada Sauce: Pour the enchilada sauce over the mixture in the skillet. Stir to combine evenly, ensuring all ingredients are well-coated with the sauce. Let it simmer for about 5 minutes.

          Add Cheese: Sprinkle the shredded cheese evenly over the top of the skillet. Cover with a lid and let it cook for an additional 3-4 minutes, or until the cheese is melted and bubbly.

            Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve warm with sliced avocado or guacamole on the side, if desired.
