1 ½ cups warm water (110°F to 115°F)

2 ¼ teaspoons active dry yeast (1 packet)

1 tablespoon granulated sugar

4 cups all-purpose flour

½ cup baking soda

1 teaspoon kosher salt (plus extra for sprinkling)

½ cup unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh chives, finely chopped

1 teaspoon onion powder

Flaky sea salt (for garnish)

Activate the Yeast: In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

    Make the Dough: Add the flour and kosher salt to the yeast mixture. Mix until a rough dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic.

      First Rise: Place the dough in a lightly oiled bowl, cover with a towel, and let it rise in a warm spot for 1 hour, or until doubled in size.

        Preheat Oven: Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper.

          Prepare the Water Bath: In a large pot, bring 10 cups of water to a gentle simmer. Once simmering, slowly add the baking soda (be careful, it may bubble up!).

            Shape the Pretzel Bites: Once risen, punch down the dough and divide it into eight equal pieces. Roll each piece into a long rope, about ½ inch thick. Cut the rope into 1-inch pieces to form the pretzel bites.

              Boil the Bites: Carefully drop the pretzel bites into the simmering baking soda water for 30 seconds. Use a slotted spoon to remove them and place on the prepared baking sheets.

                Garlic Herb Butter: In a small skillet over medium heat, melt the unsalted butter. Add minced garlic, parsley, rosemary, chives, and onion powder. Cook for 1-2 minutes until fragrant, then remove from heat.

                  Coat with Garlic Herb Butter: Brush the boiled pretzel bites generously with the garlic herb butter mixture and sprinkle with flaky sea salt.

                    Bake: Bake in the preheated oven for 12-15 minutes or until golden brown.
