4 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 large onion, sliced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup heavy cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a small bowl, mix the Cajun seasoning with olive oil to create a marinade. Rub this mixture over the chicken breasts to coat them evenly.

      In a large baking dish, arrange the sliced bell peppers, onion, garlic, and cherry tomatoes to create a colorful base.

        Place the seasoned chicken breasts on top of the vegetables.

          In a separate small bowl, whisk together the heavy cream, salt, and pepper. Pour this creamy mixture over the chicken and vegetables in the baking dish, ensuring everything is well coated.

            Sprinkle the shredded mozzarella cheese evenly on top of the chicken and vegetables.

              Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the chicken is fully cooked and the cheese is bubbly and golden.

                  Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
