For the Cajun Chicken Marinade:

4 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

For the Alabama White Sauce:

1 cup mayonnaise

1/4 cup apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (adjust for heat preference)

Prepare the Chicken Marinade: In a large mixing bowl, whisk together Cajun seasoning, olive oil, lemon juice, minced garlic, smoked paprika, salt, and black pepper. Add the chicken breasts and coat thoroughly. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

    Make the Alabama White Sauce: In another bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, lemon juice, Worcestershire sauce, garlic powder, onion powder, salt, and cayenne pepper. Whisk until smooth and well blended. Adjust seasoning to taste. Refrigerate until ready to serve.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F).

        Grill the Chicken: Remove the chicken from the marinade and discard any remaining marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F and has nice grill marks.

          Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. This helps to retain the juices and keep it tender.

            Serve: Slice the chicken and drizzle generously with Alabama white sauce. Serve with additional sauce on the side for dipping.
