4 medium russet potatoes, diced

1 large onion, chopped

2 cloves garlic, minced

2 carrots, diced

2 stalks celery, diced

4 cups vegetable or chicken broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

3 tablespoons olive oil

1 cup cooked and crumbled andouille sausage (optional for non-vegetarians)

3 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes, until the vegetables are tender and the onions are translucent. Stir in the minced garlic and sauté for another minute, being careful not to burn the garlic.

    Cook the Potatoes: Add the diced potatoes, Cajun seasoning, smoked paprika, salt, and pepper to the pot. Stir well to coat the potatoes in the spices. Pour in the broth, bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 20-25 minutes, or until the potatoes are tender.

      Blend the Soup: Once the potatoes are cooked, use an immersion blender to purée the soup to your desired consistency (you can leave some chunks for texture or blend it completely smooth). If you don't have an immersion blender, you can transfer the soup in batches to a countertop blender.

        Add Cream and Sausage: Stir in the heavy cream and crumbled andouille sausage (if using) into the soup. Continue to cook on low for another 5 minutes, allowing the flavors to meld together.

          Adjust Seasoning: Taste the soup and adjust the seasoning with more salt, pepper, or Cajun seasoning as needed.

            Serve: Ladle the soup into bowls and garnish with sliced green onions and freshly chopped parsley. Serve hot and enjoy!
