1 cup corn kernels (fresh or frozen)

1 tablespoon olive oil

Salt and pepper, to taste

3 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Optional: Hot sauce, for extra heat

Sauté the Sausage and Vegetables: In a large pot, heat the olive oil over medium heat. Add the sliced Andouille sausage and sauté for about 5 minutes or until browned. Next, toss in the diced onion and cook for another 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Add Potatoes and Broth: Stir in the diced potatoes, Cajun seasoning, smoked paprika, cayenne pepper, and a pinch of salt and pepper. Pour in the chicken broth, ensuring the potatoes are fully submerged. Bring to a boil, then reduce heat to low, cover, and let simmer for about 20 minutes or until the potatoes are tender.
