Ingredients
  

1 lb Cajun sausage (andouille or your choice), sliced into rounds

1 red bell pepper, chopped

1 green bell pepper, chopped

1 large onion, diced

2 cloves garlic, minced

2 cups zucchini, sliced

1 cup corn (fresh or frozen)

1 can (14.5 oz) diced tomatoes, undrained

2 teaspoons Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley or green onions for garnish (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.

      Stir in the chopped bell peppers and zucchini and sauté for about 5 minutes, until they start to soften.

        Add the corn, diced tomatoes (with their juices), Cajun seasoning, smoked paprika, salt, and pepper. Stir well to combine all ingredients.

          Return the browned sausage to the skillet, mixing everything together. Let simmer for about 10-15 minutes on low heat, stirring occasionally. This allows the flavors to meld together.

            Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley or green onions before serving.
