Ingredients
  

1 pound large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1 cup cherry tomatoes, halved

1 cup spinach leaves

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked pasta or rice (for serving)

Instructions
 

Season the Shrimp: In a bowl, toss the shrimp with Cajun seasoning until well coated. Set aside.

    Sauté the Shrimp: In a large skillet, heat olive oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp and set aside.

      Make the Creamy Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, stirring to combine.

        Add Vegetables: Add the halved cherry tomatoes and spinach to the skillet. Cook for 2-3 minutes until the spinach wilts and the tomatoes soften slightly.

          Combine: Lower the heat and stir the grated Parmesan cheese into the sauce until melted. Season with salt and pepper to taste.

            Finish: Return the shrimp to the skillet, tossing to coat in the creamy sauce. Allow to heat through for about 2 minutes.

              Serve: Serve the Cajun shrimp over cooked pasta or rice and garnish with fresh parsley. Enjoy!
