1 1/2 cups all-purpose flour

1 cup yellow cake mix

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1/2 cup rainbow sprinkles (plus extra for topping)

1/2 cup white chocolate chips

Buttercream Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

1/4 cup heavy cream

1 teaspoon vanilla extract

Pinch of salt

Additional rainbow sprinkles for decoration

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easier removal.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, cake mix, baking soda, and salt until well combined. Set aside.

Cream the Butters and Sugars: In a large mixing bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

Add Eggs and Vanilla: Beat in the eggs one at a time and then add the vanilla extract, mixing until fully incorporated.

Mix Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

Fold in Fun Additions: Gently fold in the rainbow sprinkles and white chocolate chips, ensuring they are evenly distributed throughout the batter.

Bake: Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for about 25-28 minutes or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove from the oven and allow the bars to cool in the pan for about 15 minutes. Then transfer them to a wire rack to cool completely.

Make the Buttercream: While the bars are cooling, prepare the buttercream. In a large mixing bowl, beat the softened butter using an electric mixer. Gradually add the powdered sugar, mixing on low until incorporated. Add the heavy cream, vanilla, and a pinch of salt, and beat on high for about 3-4 minutes until light and fluffy.

Frost the Bars: Once the cake batter bars have completely cooled, spread a generous layer of buttercream frosting over the top of the bars. Sprinkle additional rainbow sprinkles on top for that extra pop of color and fun.

Slice and Serve: Use a sharp knife to cut the bars into squares or rectangles. Enjoy your deliciously decadent cake batter bars!
