1 lb baby carrots (preferably multicolored)

2 tbsp olive oil

2 tbsp maple syrup

1 tsp salt

1/2 tsp black pepper

1 tsp ground cinnamon

1 tsp fresh rosemary, finely chopped

1 cup ricotta cheese

2 tbsp honey

Zest of 1 orange

1/4 cup candied pecans, chopped (for garnish)

Fresh mint leaves (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Carrots: Rinse the baby carrots and pat them dry. If they are large, you may want to halve or quarter them for even roasting.

      Season the Carrots: In a large mixing bowl, combine the olive oil, maple syrup, salt, pepper, cinnamon, and chopped rosemary. Add the carrots and toss them until they are evenly coated with the mixture.

        Roast the Carrots: Spread the carrots out in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.

          Whip the Ricotta: While the carrots are roasting, prepare the whipped ricotta. In a medium bowl, combine the ricotta cheese, honey, and orange zest. Using a hand mixer or a whisk, whip the mixture until it becomes smooth and creamy.
