3 ripe bananas (mashed)

1/2 cup unsalted butter (melted)

3/4 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 teaspoon ground cinnamon (optional)

1/2 cup chopped nuts (optional)

For the Brown Butter Glaze:

1/4 cup unsalted butter

1 cup powdered sugar

1-2 tablespoons milk

1/2 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line with parchment paper.

    Caramelize the Bananas: In a skillet over medium heat, add the mashed bananas and cook for about 5-7 minutes until they start to caramelize and turn a deep golden color. Stir frequently. Remove from heat and let cool slightly.

      Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until well combined. Add the eggs one at a time, followed by the vanilla extract. Stir in the caramelized bananas.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).

          Combine Wet and Dry Mixtures: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix! Stir in nuts if desired.

            Bake the Bread: Pour the batter into the prepared loaf pan. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.

              Prepare the Brown Butter Glaze: While the bread is baking, prepare the glaze. In a small saucepan, melt 1/4 cup of unsalted butter over medium heat. Continue cooking, stirring occasionally, until the butter turns golden brown and has a nutty aroma (about 4-5 minutes). Remove from heat and let cool slightly.

                Mix the Glaze: In a bowl, whisk together the brown butter, powdered sugar, milk (start with 1 tablespoon and add more for desired consistency), and vanilla extract until smooth.

                  Glaze the Bread: Once the banana bread is out of the oven, allow it to cool in the pan for about 10 minutes. Then, turn it out onto a wire rack to cool completely. Drizzle the brown butter glaze over the top of the bread before serving.
