Ingredients

  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
  • 1/3 cup honey preferably raw honey for richer flavor
  • 1/4 cup low-sodium soy sauce for a balanced salty flavor
  • 2 tablespoons apple cider vinegar adds acidity and depth
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated or minced
  • 2 tablespoons sesame oil for cooking and flavor
  • 1/2 teaspoon red pepper flakes optional, for heat
  • 2 tablespoons cornstarch for thickening the glaze
  • salt and pepper to taste

Instructions

  • In a large bowl, combine the chicken thighs, soy sauce, honey, apple cider vinegar, garlic, ginger, red pepper flakes, salt, and pepper. Toss well to ensure the chicken is fully coated and marinate for at least 15 minutes.
  • Heat the sesame oil in a large skillet over medium-high heat. Once hot, add the marinated chicken thighs, reserving the marinade. Cook for about 5-7 minutes until the chicken is browned on all sides.
  • Pour the reserved marinade into the skillet and bring to a simmer. Mix the cornstarch with a splash of water to create a slurry, then add it to the skillet. Stir to combine and let the sauce thicken for about 5-10 minutes, stirring occasionally.
  • Once the chicken is cooked through and the sauce has thickened to a sticky glaze, remove from heat. Taste and adjust seasoning if needed.
  • Serve the caramelized honey garlic chicken bites warm, garnished with sesame seeds and chopped green onions if desired. Enjoy with steamed rice or as a standalone appetizer.

Tip 1: For extra flavor, let the chicken marinate for up to 2 hours in the refrigerator.
Tip 2: Store leftovers in an airtight container in the fridge for up to 3 days.
Variation: Substitute chicken with cubed tofu for a vegetarian version of this dish.
