Ingredients

2 ½ cups all-purpose flour

1 teaspoon ground cardamom

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ teaspoon almond extract (optional)

Confectioners' sugar, for dusting

Royal icing, for decoration (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, ground cardamom, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, using an electric mixer, beat the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).

Add Egg and Extracts: Add the egg, vanilla extract, and almond extract (if using) to the butter-sugar mixture. Beat until well combined and smooth.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Chill the Dough: Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour to firm up the dough.

Roll Out and Cut: On a lightly floured surface, roll out one disk of dough to about ¼-inch thickness. Use your favorite cookie cutters to cut out shapes and transfer them to the prepared baking sheets.

Bake the Cookies: Bake the cookies in the preheated oven for 8-10 minutes, or until the edges begin to lightly brown. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Decorate: Once cooled, you can dust with confectioners' sugar or decorate with royal icing if desired.

Enjoy: Share these delightful cardamom cutout cookies with friends and family or enjoy them with a cup of tea!
