Carrot Apple Oatmeal

Ingredients
  

1 cup rolled oats

2 cups almond milk (or any milk of choice)

1 medium carrot, grated

1 medium apple, peeled and diced

2 tablespoons maple syrup (or honey)

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

A pinch of salt

1/4 cup chopped walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

Fresh apple slices and additional walnuts for topping (optional)

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, diced apple, maple syrup, cinnamon, vanilla extract, and a pinch of salt.

    Stir the mixture well and bring it to a gentle boil over medium heat.

      Once boiling, reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until the oats have absorbed most of the milk and reached your desired consistency.

        If you're adding walnuts and dried fruit, stir them in during the last minute of cooking to heat through.

          Remove from heat and let it sit for a minute to thicken further.
