2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup unsalted butter, cold and cubed

1 cup grated carrots (about 2 medium carrots)

1/2 cup raisins or currants

1/4 cup chopped walnuts (optional)

1/2 cup buttermilk

1 large egg

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

      Cut in Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.

        Add Carrots and Mix-Ins: Gently fold in the grated carrots, raisins or currants, and walnuts (if using).

          Mix Wet Ingredients: In a small bowl, whisk together the buttermilk, egg, and vanilla extract until fully combined.

            Combine Wet and Dry: Pour the wet mixture into the dry mixture. Stir together gently until just combined; do not overmix. The dough will be slightly sticky.

              Shape the Scones: Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick circle. Use a sharp knife or a pizza cutter to cut into 8 wedges (like a pizza) and carefully transfer them onto the prepared baking sheet.

                Bake the Scones: Bake in the preheated oven for about 18-20 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Allow the scones to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy plain or with a spread of cream cheese, butter, or your favorite jam!
