2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup whole milk

3 large eggs

2 tsp vanilla extract

1 ½ tsp baking powder

1 tsp baking soda

½ tsp salt

1 cup shredded coconut

1 cup chopped walnuts (or pecans)

1 cup powdered sugar (for icing)

2 tbsp milk (for icing)

1 tsp vanilla extract (for icing)

Fresh berries and mint leaves (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with butter and flour.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In another bowl, cream the softened butter and granulated sugar until light and fluffy. This should take about 3-5 minutes.

        Add Eggs and Milk: Beat in the eggs one at a time, mixing well after each addition. Then, add the milk and vanilla extract, mixing until fully incorporated.

          Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix. Gently fold in the shredded coconut and chopped walnuts.

            Bake the Cakes: Divide the batter evenly between the two prepared pans. Smooth the tops with a spatula and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

              Cool the Layers: Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely.

                Make the Icing: In a small bowl, whisk together the powdered sugar, 2 tbsp milk, and 1 tsp vanilla extract until smooth. If the icing is too thick, add a little more milk until you reach the desired consistency.

                  Assemble the Cake: Place one cake layer on a serving plate. Spread a thick layer of icing on top. Place the second cake layer on top and cover the entire cake with the remaining icing.

                    Decorate: Garnish the cake with fresh berries and mint leaves for an elegant touch.
