Ingredients
  

8 oz rotini pasta

1 lb ground beef

1 can (15 oz) sweet corn, drained

1 packet ranch seasoning mix

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup

1 cup milk

1/2 cup diced tomatoes (optional)

1/2 cup shredded mozzarella cheese

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring water to a boil and add salt. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.

      Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it apart with a spatula, and cook until browned and cooked through. Season with salt and pepper.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, browned beef, sweet corn, ranch seasoning, cream of mushroom soup, and milk. If using, add the diced tomatoes, and mix everything until well combined.

          Layer the Bake: Transfer half of the pasta mixture into a greased 9x13 inch baking dish. Sprinkle half of the shredded cheddar cheese on top. Add the remaining pasta mixture and finish with the rest of the cheddar cheese and all of the mozzarella cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired, then serve warm.
