Cheese and Spinach Stuffed Pastry

Ingredients
  

1 sheet of puff pastry (thawed)

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup feta cheese, crumbled

1/2 cup grated Parmesan cheese

1 egg, beaten (for egg wash)

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried oregano

Sesame seeds (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sautéing Spinach: In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted. Remove from heat and let it cool slightly.

      Prepare the Filling: In a mixing bowl, combine the ricotta, feta, and Parmesan cheese. Stir in the sautéed spinach, oregano, salt, and pepper until well mixed.

        Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet until it’s about 1/8 inch thick. Cut the pastry into squares (approximately 4 x 4 inches).

          Assemble the Pastries: Place a generous tablespoon of the cheese and spinach mixture in the center of each pastry square. Fold the corners of the pastry over to form a triangle or a pocket shape and seal the edges by pressing down with your fingers or a fork.

            Egg Wash: Brush the tops of the pastries with the beaten egg to give them a golden color while baking. If desired, sprinkle sesame seeds on top for extra crunch.

              Bake: Place the stuffed pastries on a parchment-lined baking sheet and bake in the preheated oven for about 20-25 minutes or until golden brown and puffed.
