Ingredients
  

2 cups all-purpose flour

1 teaspoon salt

1/2 teaspoon sugar

1/2 cup warm water

1/4 cup olive oil

1/2 teaspoon instant yeast

1 cup feta cheese, crumbled

1/2 cup mozzarella cheese, shredded

1/4 cup parsley, finely chopped

1 egg (for egg wash)

Sesame seeds (optional, for garnish)

Instructions
 

In a large mixing bowl, combine the flour, salt, sugar, and instant yeast.

    Gradually add the warm water and olive oil to the dry ingredients. Mix well until a soft dough forms.

      Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a clean cloth and let it rest for 30 minutes.

        While the dough is resting, prepare the filling by combining the crumbled feta, shredded mozzarella, and chopped parsley in a bowl. Mix until well combined.

          Preheat your oven to 375°F (190°C).

            Once the dough has rested, divide it into small balls (about the size of a golf ball). Roll each ball into a circle on a floured surface, about 6 inches in diameter.

              Place a generous tablespoon of cheese filling in the center of each circle.

                Fold the dough over to form a half-moon shape, pinching the edges to seal tightly.

                  Place the fatayers on a baking sheet lined with parchment paper. Beat the egg and brush it over the top of each fatayer, and sprinkle with sesame seeds if desired.

                    Bake in the preheated oven for 20-25 minutes, or until golden brown.

                      Remove from the oven and let cool for a few minutes before serving.
