1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

3 medium potatoes, peeled and cubed

4 cups beef broth

1 cup milk

1 cup shredded cheddar cheese

1/2 cup diced pickles (optional)

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain excess grease if necessary.

    Sauté the Vegetables: Add the diced onion, minced garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables have softened.

      Add Potatoes and Broth: Stir in the cubed potatoes, beef broth, tomato paste, Worcestershire sauce, and thyme. Season with salt and pepper. Bring the mixture to a boil.

        Simmer: Reduce heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the potatoes are tender.

          Finish the Chowder: Once the potatoes are cooked, stir in the milk and shredded cheddar cheese. Continue stirring until the cheese is melted and the soup is creamy.

            Optional Add-ins: If you desire, mix in the diced pickles to add that classic cheeseburger tang. Adjust seasoning to your liking.
