4 medium-sized apples (such as Granny Smith or Honeycrisp)

8 oz cream cheese, softened

1/2 cup granulated sugar

1/4 cup sour cream

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 cup crushed graham crackers

1/4 cup mini chocolate chips (optional)

2 tbsp butter, melted

1/4 cup chopped walnuts or pecans (optional)

Additional cinnamon sugar for sprinkling (1 tbsp sugar + 1 tsp cinnamon mixed)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper or lightly grease it.

    Carefully core the apples, removing the seeds and making a hollow space for the filling. You can use an apple corer or a paring knife for this.

      In a mixing bowl, combine the softened cream cheese, granulated sugar, sour cream, vanilla extract, cinnamon, and nutmeg. Beat with an electric mixer until smooth and creamy.

        Gradually fold in the crushed graham crackers and mini chocolate chips (if using) into the cream cheese mixture until well combined.

          Stuff each cored apple with the cheesecake filling, overflowing slightly to ensure a generous portion.

            Place the stuffed apples in the prepared baking dish. Drizzle the melted butter over the apples and sprinkle with the additional cinnamon sugar.

              Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the apples are tender and the filling is slightly set.
