Ingredients

6 large eggs

1 cup shredded sharp cheddar cheese

1 cup cooked bacon bits (about 6-8 slices of bacon)

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or muffin liners

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a non-stick muffin tin by spraying it with cooking spray or lining it with muffin liners.

Cook the Bacon: If you haven't already cooked the bacon, cook it until crispy. Once done, let it cool, then chop it into small bits.

Mix the Wet Ingredients: In a large mixing bowl, crack the eggs and whisk them thoroughly until well combined.

Add Cheese and Seasonings: Stir in the shredded cheese, diced bell peppers, chopped green onions, garlic powder, and paprika. Season with salt and pepper according to your taste.

Incorporate Bacon: Gently fold in the cooked bacon bits, ensuring they are evenly distributed throughout the mixture.

Fill Muffin Tin: Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full to allow for rising.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and the tops are lightly golden.

Cool and Serve: After baking, remove the muffins from the oven and allow them to cool for a few minutes. Then, carefully run a knife around the edges to loosen them. Serve warm or let them cool completely and store for later.
