Cheesy Baked Zucchini Boats

This cheesy baked zucchini boats is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

4 medium zucchini

1 cup cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, canned, or frozen)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Slice the zucchini in half lengthwise and scoop out the center flesh with a spoon to create a boat shape. Place the zucchini halves on the prepared baking sheet.

      In a large mixing bowl, combine the cooked quinoa or rice, cherry tomatoes, corn, ½ cup of mozzarella, garlic, Italian herbs, salt, and pepper. Mix thoroughly.

        Fill each zucchini boat with the mixture, pressing down gently to pack it in.

          Top the filled zucchini with the remaining mozzarella and sprinkle the grated Parmesan on top.

            Drizzle olive oil over the zucchini boats for added flavor and moisture.

              Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is melted and golden.

                Remove from the oven and let cool slightly. Garnish with fresh basil if desired.

                  Serve warm and enjoy your delicious cheesy baked zucchini boats!
