1 lb ground beef

4 medium potatoes, peeled and thinly sliced

1 medium onion, diced

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet, heat olive oil over medium-high heat. Add the diced onion and minced garlic, and sauté until soft, about 2-3 minutes.

      Brown the Meat: Add the ground beef to the skillet. Season with salt, pepper, and Italian seasoning. Cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if needed.

        Prepare the Sauce: In a bowl, mix the cream of mushroom soup and beef broth until well combined. Set aside.

          Layer the Casserole:

            - In a greased 9x13 inch baking dish, spread half of the sliced potatoes evenly across the bottom.

              - Layer half of the cooked beef mixture over the potatoes.

                - Pour half of the soup mixture over the beef, then sprinkle half of the cheddar and mozzarella cheese on top.

                  - Repeat the layers with the remaining potatoes, beef mixture, soup, and cheeses.

                    Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

                      Uncover and Finish: After 45 minutes, remove the foil and bake for an additional 15 minutes, or until the top is golden and the potatoes are tender.

                        Garnish and Serve: Once done, remove from the oven and let it rest for about 5 minutes. Garnish with freshly chopped parsley before serving.
