Ingredients
  

4 boneless, skinless chicken breasts

1 cup mushrooms, finely chopped (such as cremini or button)

3 cloves garlic, minced

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mushroom Filling:

      - In a skillet, melt the butter over medium heat.

        - Add the minced garlic and sauté until fragrant, about 1 minute.

          - Stir in the chopped mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes.

            - Reduce the heat to low and mix in the cream cheese, shredded mozzarella, Parmesan, thyme, oregano, salt, pepper, and red pepper flakes (if using). Stir until everything is well combined, and the cheese is melted and creamy. Remove from heat.

              Prepare the Chicken:

                - While the filling cools slightly, place the chicken breasts on a cutting board. Using a sharp knife, carefully create a pocket in each chicken breast by slicing it horizontally. Be careful not to cut all the way through.

                  - Season the outsides of the chicken generously with salt and pepper.

                    Stuff the Chicken:

                      - Spoon the cheesy mushroom mixture into each chicken breast pocket. Use toothpicks to secure the openings if needed.

                        Bake the Chicken:

                          - Place the stuffed chicken breasts in a lightly greased baking dish. Optionally, brush a little melted butter on top of each chicken breast for added flavor.

                            - Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).

                              Serve:

                                - Once baked, let the chicken rest for about 5 minutes. Garnish with freshly chopped parsley before serving.
