Ingredients

1 (30 oz) bag frozen shredded hashbrowns, thawed

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

2 cups shredded sharp cheddar cheese

1/2 cup diced onion

1/2 cup melted butter (1 stick)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup crushed cornflakes (optional, for topping)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

In a large mixing bowl, combine the thawed hashbrowns, sour cream, cream of chicken soup, melted butter, diced onion, 1 1/2 cups of the shredded cheddar cheese, garlic powder, onion powder, and seasoning with salt and pepper. Mix until evenly combined.

Transfer the mixture into the prepared baking dish, spreading it out evenly.

If using, sprinkle the crushed cornflakes evenly over the top of the casserole for an added crunch.

Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is bubbly around the edges.

Remove from the oven and let it cool for about 5 minutes before serving. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top, allowing it to melt slightly.

Serve warm and enjoy this cheesy, comforting dish!
