1 cup shredded sharp cheddar cheese

2 cups all-purpose flour

1/4 cup powdered sugar

1/2 teaspoon salt

1/2 teaspoon baking powder

1-2 fresh jalapeos, finely chopped (adjust based on spice preference)

1/4 teaspoon garlic powder

Optional: Flaked sea salt for topping

Preheat Oven: Start by preheating your oven to 350F (175C). Line a baking sheet with parchment paper.

    Mix Butter and Cheese: In a large mixing bowl, cream together the softened butter and shredded cheddar cheese until the mixture is light and fluffy.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, powdered sugar, salt, baking powder, and garlic powder until well blended.

        Incorporate Dry into Wet: Gradually add the dry mixture to the butter and cheese mixture, stirring until just combined. Make sure not to overmix; it's okay if the dough is a bit crumbly.

          Add Jalapeos: Fold in the finely chopped jalapeos into the dough, distributing them evenly.

            Shape the Cookies: Using your hands, form the dough into a log shape (about 1.5 inches in diameter). Wrap tightly in plastic wrap and refrigerate for 30 minutes to firm up.

              Slice and Arrange: Once chilled, slice the log into 1/4-inch thick rounds and place them on the prepared baking sheet about 1 inch apart. If desired, sprinkle a little flaked sea salt on top of each cookie.

                Bake: Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden. Keep an eye on them, as baking times can vary.

                  Cool: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
