8 oz (about 225g) pasta (penne or fusilli work well)

12 oz (about 340g) kielbasa sausage, sliced into rounds

1 cup (about 240ml) heavy cream

1 cup (about 100g) shredded sharp cheddar cheese

1/2 cup (about 50g) grated Parmesan cheese

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

    Sauté the Kielbasa: In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook for about 5-7 minutes, or until they are browned and slightly crispy. Remove the kielbasa from the skillet and set aside.

      Prepare the Sauce Base: In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

        Make the Cream Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir in the smoked paprika, black pepper, and salt to taste. Allow the cream to simmer gently for about 2-3 minutes.

          Add the Cheeses: Gradually add the shredded sharp cheddar cheese and grated Parmesan cheese to the cream sauce, stirring constantly until melted and smooth.

            Combine Everything: Add the cooked pasta and the browned kielbasa back into the skillet. Toss everything together gently until the pasta and sausage are well-coated in the cheesy sauce.
