Ingredients

1 tbsp olive oil

14 oz kielbasa sausage, sliced

1 cup uncooked long-grain rice

2 ½ cups chicken or vegetable broth

2 cups fresh broccoli florets

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Kielbasa: In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook for about 5 minutes, or until browned and slightly crispy. Remove the kielbasa from the skillet and set aside.

Cook the Rice: In the same skillet, add the uncooked rice and toast for 2-3 minutes, stirring frequently. This adds a nutty flavor to the rice.

Add Broth and Seasonings: Pour the chicken or vegetable broth into the skillet with the rice. Stir in the garlic powder, onion powder, salt, and pepper. Bring the mixture to a boil.

Add Broccoli and Kielbasa: Once boiling, reduce the heat to low. Add the broccoli florets and the cooked kielbasa back into the skillet. Cover and let it simmer for about 15-20 minutes, or until the rice is cooked and has absorbed all the liquid.

Create the Cheesy Finish: Once the rice is tender, remove the skillet from heat and stir in the shredded cheddar cheese and grated Parmesan until melted and creamy.

Serve: Garnish with freshly chopped parsley for a pop of color. Serve warm and enjoy your delicious Cheesy Kielbasa, Rice, and Broccoli Skillet!
