Ingredients

8 oz (about 225g) uncooked pasta (penne or rotini work best)

1 lb (450g) large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup white wine (or chicken broth)

1 lemon, juiced and zested

1 cup heavy cream

1 cup grated Parmesan cheese, plus more for topping

1 cup shredded mozzarella cheese

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

Sauté the Shrimp: In a large skillet, melt the butter over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the shrimp, season with salt and pepper, and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.

Prepare the Sauce: In the same skillet, pour in the white wine (or chicken broth) and bring to a simmer, scraping the bottom of the skillet to deglaze. Let it reduce for about 2-3 minutes. Add the lemon juice and zest, followed by heavy cream. Stir and allow to simmer for another 5 minutes.

Combine Pasta and Shrimp: Reduce the heat to low, then add the cooked pasta, shrimp, and Parmesan cheese to the skillet, mixing well to combine everything evenly.

Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly, then sprinkle mozzarella cheese on top, along with additional Parmesan cheese if desired.

Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh parsley before serving. Enjoy your cheesy shrimp scampi pasta bake!
