Ingredients
  

2 cups broccoli florets

1 cup cauliflower florets

1 cup sliced carrots

1 cup chopped bell peppers (any color)

1 cup corn kernels (fresh or frozen)

1 cup chopped onion

3 cloves garlic, minced

2 cups shredded cheddar cheese

1 cup ricotta cheese

1 cup milk (whole or low-fat)

2 large eggs

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1 cup breadcrumbs (for topping)

2 tablespoons olive oil

1 teaspoon paprika (optional, for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent (about 3-4 minutes).

      Add broccoli, cauliflower, carrots, and bell peppers to the skillet. Sauté for an additional 5-7 minutes until slightly tender. Stir in corn and remove from heat.

        In a large bowl, mix the shredded cheddar cheese, ricotta cheese, milk, eggs, thyme, oregano, salt, and pepper until well combined.

          Incorporate the sautéed vegetables into the cheese mixture, stirring until evenly mixed.

            Transfer the mixture into a greased 9x13 inch casserole dish. Spread it out evenly.

              In a separate bowl, mix breadcrumbs with melted butter (if using) and sprinkle over the top of the casserole.

                Bake in the preheated oven for 30-35 minutes or until the top is golden and bubbly.

                  Let it cool for 5-10 minutes before serving. Garnish with fresh paprika if desired.
