Ingredients

2 cups elbow macaroni

3 cups sharp cheddar cheese, shredded

1 cup Cheetos Flamin’ Hot, crushed (plus extra for topping)

1/2 cup cream cheese, softened

1/2 cup milk

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

Pepper, to taste

Cooking spray or muffin liners

Instructions

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with muffin liners.

Cook Macaroni: In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make Cheese Sauce: In the same pot over low heat, combine the melted butter, cream cheese, and milk. Stir continuously until the cream cheese is melted and the mixture is smooth.

Add Cheese and Seasonings: Gradually add in the shredded cheddar cheese, crushed Cheetos, garlic powder, onion powder, paprika, salt, and pepper. Mix until the cheese has melted and the sauce is creamy.

Combine: Add the cooked macaroni to the cheese sauce, stirring until the pasta is fully coated. Allow to cool for a few minutes before adding the eggs, mixing until well combined.

Fill Muffin Tin: Spoon the mac and cheese mixture into each muffin cup, filling them about 3/4 full. Top each muffin with additional crushed Cheetos for extra crunch.

Bake: Place the muffin tin into the preheated oven and bake for 20-25 minutes, or until the tops are golden and bubbly.

Cool and Serve: Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack. Serve warm as a snack, appetizer, or side dish!
