2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, melted

1 large egg

2 large egg whites

1 teaspoon vanilla extract

1 teaspoon almond extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup dried cherries, chopped

1/2 cup sliced almonds

Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter, granulated sugar, egg, egg whites, vanilla extract, and almond extract until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

        Add Fruits and Nuts: Gently fold in the chopped dried cherries and sliced almonds until evenly distributed throughout the dough.

          Shape the Dough: Transfer the dough onto a lightly floured surface. Divide the dough in half and shape each portion into a log approximately 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, spacing them about 3 inches apart.

            First Bake: Bake the logs in the preheated oven for 25-30 minutes, or until they are golden brown and firm to the touch. Remove from the oven and let them cool on the baking sheet for about 10 minutes.

              Slice the Biscotti: Once slightly cooled, use a serrated knife to slice the logs diagonally into 1/2-inch thick slices.

                Second Bake: Place the sliced biscotti cut-side down back on the baking sheet. Bake for an additional 10-15 minutes, flipping halfway through, until they are crisp and lightly toasted.
