Ingredients

For the brownie layer:

1/2 cup unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the cheesecake layer:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup cherry pie filling

Instructions

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

Make the brownie layer: In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla extract until well combined.

Add dry ingredients: Sift in the cocoa powder, flour, salt, and baking powder. Mix until just combined, but do not overmix.

Pour the brownie batter into the prepared baking pan, spreading it evenly across the bottom.

Prepare the cheesecake layer: In a mixing bowl, combine the softened cream cheese and sugar, mixing until smooth and creamy. Add the egg and vanilla extract, beating until well incorporated.

Spread the cheesecake mixture over the brownie layer in the pan. Use a spatula to evenly distribute it.

Dot the cheesecake layer with spoonfuls of cherry pie filling, then use a knife or toothpick to swirl it slightly into the cheesecake.

Bake in the preheated oven for 30-35 minutes, or until the cheesecake is set and the edges are slightly golden. A toothpick inserted should come out with moist crumbs, not wet batter.

Cool completely at room temperature, then refrigerate for at least 2 hours before slicing into bars.

Serve chilled, and enjoy the delightful layers of chocolate brownie, creamy cheesecake, and vibrant cherries!
