Ingredients
  

For the Cookie Dough:

2 ½ cups all-purpose flour

1 tsp baking soda

½ tsp salt

1 cup unsalted butter, softened

¾ cup granulated sugar

¾ cup brown sugar, packed

1 tsp vanilla extract

2 large eggs

For the Cheesecake Filling:

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

¼ cup sour cream

½ cup cherry pie filling (or fresh cherries, chopped)

For Topping:

Additional cherry pie filling (optional)

Whipped cream (optional)

Instructions
 

Prepare the Cheesecake Filling:

    - In a medium bowl, beat the softened cream cheese using a hand mixer or stand mixer until smooth.

      - Add the powdered sugar, vanilla extract, and sour cream and beat until well combined.

        - Gently fold in the cherry pie filling. Set this mixture in the fridge to firm up for about 30 minutes.

          Make the Cookie Dough:

            - In a large mixing bowl, whisk together the flour, baking soda, and salt. Set aside.

              - In another large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                - Mix in the vanilla extract and then add the eggs one at a time, beating well after each addition.

                  - Gradually add the flour mixture to the wet ingredients, mixing until just combined.

                    Assemble the Cookies:

                      - Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

                        - Using a tablespoon, scoop out cookie dough and flatten it slightly in the palm of your hand.

                          - Place about a teaspoon of the chilled cheesecake filling in the center of the dough, then fold the dough around the filling, sealing it completely.

                            - Roll the filled dough into a ball and place it on the prepared baking sheet. Repeat with remaining dough and filling.

                              Bake the Cookies:

                                - Bake in the preheated oven for 10-12 minutes until the edges are lightly golden.

                                  - Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                                    Serve:

                                      - Serve warm or at room temperature, topped with additional cherry pie filling and whipped cream if desired.
