Ingredients
  

2 ½ cups all-purpose flour

1 tsp baking soda

1 tsp ground cinnamon

1 tsp ground ginger

½ tsp ground cloves

½ tsp nutmeg

½ tsp salt

¾ cup unsalted butter, softened

1 cup packed brown sugar

1 large egg

¼ cup unsulfured molasses

1 tsp pure vanilla extract

½ cup granulated sugar (for rolling)

Powdered sugar (for dusting)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ground cinnamon, ground ginger, ground cloves, nutmeg, and salt until well combined. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer on medium speed until creamy and smooth, about 2-3 minutes.

        Add Egg and Flavors: Add the egg, molasses, and vanilla extract to the butter-sugar mixture. Beat until fully incorporated.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. The dough will be sticky.

            Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to firm up.

              Prepare for Baking: Once chilled, scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball first in granulated sugar, then in powdered sugar, ensuring they are generously coated.

                Bake Cookies: Place the sugar-coated dough balls on the prepared baking sheets, spaced about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are slightly crinkled.

                  Cool Down: Remove from oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
