12 oz spaghetti

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (28 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 tbsp olive oil

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sauce: In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion and diced bell pepper, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Brown the Sausage: Add the Italian sausage to the pan, breaking it apart with a spatula. Cook until browned and cooked through. Drain any excess fat.

        Combine Ingredients: Stir in the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), and season with salt and pepper to taste. Bring the sauce to a simmer and let it cook for about 15 minutes, stirring occasionally.

          Mix Spaghetti and Sauce: Add the cooked spaghetti to the sauce, tossing to coat the pasta evenly. Let it simmer together for an additional 5 minutes for the flavors to meld.

            Cheesy Topping: Preheat your oven to 375°F (190°C). Transfer the spaghetti mixture to a greased 9x13 inch baking dish. Top with shredded mozzarella cheese.

              Bake: Place in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
