2 large chicken breasts, boneless and skinless

3 cups fresh spinach, washed and roughly chopped

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

2 tablespoons paprika (sweet or smoked, depending on preference)

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for heat)

½ cup chicken broth

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt, black pepper, and paprika. Make sure to coat them well on all sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden-brown color. Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same skillet, reduce the heat to medium and add the chopped onions. Sauté for about 3-4 minutes until the onions become translucent. Then, add the minced garlic and cook for an additional minute until fragrant.

        Create the Sauce: Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream, remaining paprika, and cayenne pepper if using. Allow it to simmer for 5 minutes, stirring occasionally, to thicken slightly.

          Add Spinach: Stir in the chopped spinach and continue cooking for another 2-3 minutes, or until the spinach wilts down.

            Combine Chicken and Sauce: Return the cooked chicken back to the skillet, ensuring it is well-coated with the creamy paprika sauce. Allow it to simmer together on low heat for an additional 3-4 minutes to meld the flavors.

              Garnish and Serve: Once done, remove from the heat and garnish with chopped fresh parsley. Serve hot over rice, pasta, or with crusty bread to soak up the delicious sauce.
