4 bone-in, skin-on chicken thighs

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup mushrooms, sliced

1 can (14 oz) crushed tomatoes

1/2 cup dry red wine

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnishing)

Cooked pasta or crusty bread (for serving)

Instructions
 

In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then place them skin-side down in the pan. Sear for about 5-6 minutes on each side until the chicken is golden brown. Remove the chicken and set aside.

    In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant and the onion is translucent.

      Add the sliced bell peppers and mushrooms to the skillet, cooking for an additional 5 minutes until they start to soften.

        Pour in the red wine, scraping up any browned bits from the bottom of the pan. Allow the wine to simmer for 2-3 minutes to reduce slightly.

          Stir in the crushed tomatoes, oregano, and basil. Bring the sauce to a gentle boil.

            Return the seared chicken to the skillet, nestling them into the sauce. Cover the skillet and reduce the heat to low, allowing it to simmer for about 30-35 minutes, or until the chicken is fully cooked and tender.

              Taste and adjust seasoning with more salt and pepper as necessary.

                Before serving, garnish with freshly chopped parsley.

                  Serve the Chicken Cacciatore warm over cooked pasta or with a side of crusty bread to soak up the flavorful tomato sauce.
