Chicken Chorizo Pasta

This chicken chorizo pasta is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

300g penne pasta

200g chorizo sausage, sliced

300g boneless chicken thighs, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 can (400g) diced tomatoes

1 tbsp tomato paste

1 tsp smoked paprika

1/2 tsp crushed red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

2 tbsp olive oil

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

    Cook the Chorizo: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced chorizo and cook for about 5-7 minutes, until browned and crispy. Remove from the skillet and set aside, leaving the oil in the skillet.

      Sauté the Chicken: In the same skillet, add another tablespoon of olive oil if needed, then add the diced chicken thighs. Season with salt and pepper and cook for about 5-6 minutes until browned and cooked through. Remove from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the chopped onion and cook for about 3 minutes, until softened. Stir in the minced garlic and cook for an additional minute until fragrant. Add the diced red bell pepper and cook for an additional 3-4 minutes, until tender.

          Combine Ingredients: Return the cooked chorizo and chicken to the skillet. Stir in the diced tomatoes, tomato paste, smoked paprika, and crushed red pepper flakes. Let everything simmer for about 5-10 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper to taste.

            Mix with Pasta: Add the cooked penne pasta to the skillet and toss everything together until the pasta is well coated with the sauce. If the mixture is too thick, add a splash of pasta cooking water to reach desired consistency.

              Serve: Remove from heat and serve hot, garnished with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.
