Ingredients
  

4 boneless, skinless chicken breasts

2 oranges (zest and juice)

1 lemon (zest and juice)

3 cloves garlic, minced

1 tsp fresh thyme, chopped

1 tsp fresh rosemary, chopped

1/4 cup olive oil

Salt and pepper to taste

1 zucchini, sliced

1 bell pepper (any color), chopped

1 cup cherry tomatoes

Fresh parsley for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the orange zest and juice, lemon zest and juice, minced garlic, thyme, rosemary, olive oil, salt, and pepper. Whisk to combine. Add the chicken breasts, ensuring they are well-coated, and marinate for at least 30 minutes (up to 4 hours in the refrigerator for more flavor).

    Prepare the Grill: Preheat your grill to medium-high heat. Ensure the grates are clean and oiled to prevent sticking.

      Prepare Summer Veggies: In a separate bowl, toss the zucchini, bell pepper, and cherry tomatoes with a drizzle of olive oil, salt, and pepper.

        Grill the Chicken: Remove the chicken from the marinade (discard the marinade) and place it on the grill. Cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

          Grill the Veggies: While the chicken is cooking, add the prepared vegetables to the grill. Grill for about 4-5 minutes on each side until they are tender and slightly charred.

            Serve: Once cooked, let the chicken rest for a few minutes before slicing. Serve the grilled chicken topped with the summer veggies and sprinkle with fresh parsley for added flavor and color.
