Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

Juice of 2 lemons

Zest of 1 lemon

4 cloves garlic, minced

1 tablespoon fresh thyme, chopped

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

Lemon slices (for garnish)

Instructions

In a large bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, thyme, rosemary, parsley, salt, and pepper. Mix well to create a marinade.

Add the chicken breasts to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or up to 4 hours for more flavor).

Preheat your grill to medium-high heat.

Remove the chicken from the marinade, letting excess liquid drip off. Discard the leftover marinade.

Place the chicken on the grill and cook for about 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

Remove the chicken from the grill and let it rest for a few minutes before slicing.

Serve the grilled chicken with lemon slices on the side and a sprinkle of fresh herbs if desired.
