1 can (14.5 oz) diced tomatoes (with juices)

4 cups chicken broth

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

2 cups shredded cooked chicken (rotisserie chicken works well)

2 cups enchilada sauce (store-bought or homemade)

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Crushed tortilla chips (for topping)

Shredded cheese, such as cheddar or Monterey Jack (for topping)

Sour cream (optional for serving)

Lime wedges (for serving)

Instructions
 

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic and sauté for an additional 1 minute until fragrant.

    Add Spices: Stir in chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1-2 minutes to allow the spices to bloom.

      Combine Ingredients: Add the diced tomatoes (with juices), chicken broth, black beans, corn, shredded chicken, and enchilada sauce to the pot. Stir to combine.

        Simmer the Soup: Bring the mixture to a boil, then reduce to a simmer. Cover and let cook for 20-25 minutes to meld the flavors, stirring occasionally.

          Season to Taste: Taste the soup and add salt and pepper as needed. Adjust spice levels according to preference.
