1.5 lbs boneless, skinless chicken thighs

1/4 cup olive oil

Juice and zest of 2 lemons

4 cloves garlic, minced

1 tablespoon fresh rosemary, minced

1 tablespoon fresh thyme, minced

1 tablespoon honey

Salt and pepper to taste

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 red onion, cut into chunks

Skewers (soaked in water for 30 minutes if using wooden ones)

Instructions
 

Marinate the Chicken: In a large bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, honey, salt, and pepper. Mix well. Cut the chicken thighs into bite-sized pieces and add them to the marinade. Cover and refrigerate for at least 1 hour, or up to 4 hours for best flavor.

    Prepare the Skewers: While the chicken is marinating, soak wooden skewers in water for 30 minutes (if using). Preheat the grill to medium-high heat.

      Assemble Skewers: Remove the chicken from the marinade and thread the chicken pieces onto the skewers, alternating with chunks of red bell pepper, yellow bell pepper, and red onion for color and flavor.

        Grill the Skewers: Place the skewers on the hot grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. Ensure the internal temperature of the chicken reaches 165°F (75°C).
