Ingredients
  

1 lb ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 large egg

1/4 cup fresh parsley, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon pepper

1 cup marinara sauce

Olive oil spray for greasing the muffin tin

Instructions
 

Preheat the oven to 375°F (190°C). Grease a standard muffin tin with olive oil spray to ensure easy removal.

    Mix the Chicken Mixture: In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, shredded mozzarella cheese, egg, parsley, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.

      Shape the Cups: Using your hands, take a handful of the mixture and shape it into a cup by pressing it into the greased muffin tin. Make sure the bottom and sides are well-formed to hold the filling.

        Bake the Cups: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the cups are golden and cooked through.

          Add Marinara and Cheese: Once the chicken cups are done, carefully remove them from the oven. Spoon marinara sauce over each cup and sprinkle extra mozzarella on top. Return to the oven and bake for an additional 5-10 minutes, until the cheese is bubbly and melted.

            Cool & Serve: Allow the Chicken Parmesan Cups to cool for a few minutes before using a spoon or small spatula to carefully remove them from the muffin tin. Serve warm, garnished with fresh parsley if desired.
