1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 can (14 oz) diced tomatoes, with juices

4 cups chicken broth

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for garnish

1 cup mozzarella cheese, shredded

Fresh basil leaves, for garnish

Cooked pasta of choice (like penne or small shells), optional

Instructions
 

Sauté the Chicken: In a large pot over medium heat, heat the olive oil. Add the diced chicken and season with salt and pepper. Cook until browned, about 5-7 minutes. Remove the chicken from the pot and set it aside.

    Cook the Vegetables: In the same pot, add the onions, carrots, and celery. Sauté for about 5 minutes, until the vegetables are softened. Stir in the minced garlic and cook for another minute until fragrant.

      Add Liquids and Spices: Pour in the diced tomatoes with their juices and the chicken broth. Stir in the oregano and basil. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.
