2 cups cooked rotini pasta

1 cup cooked, shredded chicken breast (about 1 large chicken breast)

1 cup cherry tomatoes, halved

1/2 cup bell pepper, diced (any color)

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup fresh basil leaves, chopped

1/2 cup pesto sauce (store-bought or homemade)

1/4 cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons olive oil (optional for a richer flavor)

Instructions
 

Prepare the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
