Chicken Piccata with Lemon Caper Sauce

Ingredients
  

4 boneless, skinless chicken breasts

Salt and freshly ground black pepper, to taste

1/2 cup all-purpose flour, for dredging

2 tablespoons olive oil

4 tablespoons unsalted butter, divided

1/2 cup fresh lemon juice (about 2 lemons)

1 cup chicken broth

1/4 cup capers, rinsed and drained

2 tablespoons fresh parsley, chopped (for garnish)

Lemon slices, for garnish

Instructions
 

Prepare the Chicken: Start by seasoning both sides of the chicken breasts with salt and pepper. Dredge each piece in the flour, shaking off any excess.

    Cook the Chicken: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Transfer the chicken to a plate and cover to keep warm.

      Make the Sauce: In the same skillet, reduce the heat to medium. Add the lemon juice, scraping the brown bits from the bottom of the pan with a wooden spoon. Pour in the chicken broth and bring to a simmer. Allow the sauce to reduce slightly, for about 3-4 minutes.

        Add Capers and Finish Sauce: Stir the capers into the sauce. Then whisk in the remaining 2 tablespoons of butter until melted and the sauce is slightly creamy. Taste and adjust seasoning with salt and pepper if needed.

          Combine: Return the cooked chicken to the skillet, coating each piece with the lemon caper sauce. Let it simmer for another minute to warm through.

            Serve: Plate the chicken, drizzling the sauce generously over each piece. Garnish with chopped parsley and lemon slices for an extra pop of flavor.
