Chicken Saltimbocca

Ingredients
  

4 boneless, skinless chicken breasts

8 slices of prosciutto

8 fresh sage leaves

1 cup all-purpose flour

Salt and pepper, to taste

3 tablespoons olive oil

3 tablespoons unsalted butter

1 cup white wine (such as Sauvignon Blanc)

1 tablespoon fresh lemon juice

Fresh sage leaves, for garnish

Instructions
 

Prepare the Chicken: Place each chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound them to about 1/2 inch thick. Season each breast lightly with salt and pepper.

    Wrap with Prosciutto & Sage: Lay 2 slices of prosciutto on top of each chicken breast, followed by 2 sage leaves (top the prosciutto). Press down gently to help them adhere.

      Flour the Chicken: In a shallow dish, spread the flour. Dredge each chicken breast in the flour mixture, shaking off any excess.

        Cook the Chicken: In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breast, prosciutto side down, and cook for about 4-5 minutes until golden and crispy. Flip and cook the other side for an additional 4 minutes.

          Prepare the Sauce: Once chicken is cooked through, transfer it to a serving plate. In the same skillet, carefully add white wine, scraping the browned bits from the bottom of the pan. Allow to simmer for a few minutes until it reduces slightly.

            Finish the Sauce: Stir in the lemon juice and remaining 2 tablespoons of butter into the sauce until melted and smooth. Adjust seasoning with salt and pepper if needed.

              Serve: Drizzle the sauce over the chicken. Garnish with fresh sage leaves and serve immediately with your choice of side (like mashed potatoes or a green salad).
